Anne's Seafood Bisque

Ingredients:
  • Approximately 4 lbs. cooked seafood (crab, fish, clams, shrimp)
  • 2 tbsp. olive oil
  • 4 tbsp. butter
  • ½ cup onion (finely chopped)
  • ½ cup carrot (finely chopped)
  • ½ cup celery (finely chopped)
  • 1 bay leaf
  • dash of garlic powder
  • dash of cayenne pepper
  • ½ tsp. seafood seasoning
  • 1 cup dry white wine
  • 2 cups chicken broth
  • 2 cups clam juice
  • 1 small can (6oz.) tomato paste
  • 2 cups heavy cream
  • salt and fresh ground pepper to taste

Instructions:

 In a large pot, melt the butter in the oil and sauté the carrot, onion and celery.  When lightly browned, add all other ingredients except the seafood, cream, salt and pepper.  Bring to a boil and cook for 45 minutes.  Strain into another pot with a fine cheesecloth.  Add cream and cook on medium low for 5 minutes.  Add seafood, season with salt and pepper, and cook for 5 additional minutes.
