Shrimp Barataria
- 2 lbs. cleaned shrimp
- 2 bunches of green onions
- 4 large tomatoes
- 1 stick butter
- ¼ cup flour
- 2 tbsp. sugar
- 1 cup half and half
- 2 tbsp. chicken base (3 chicken bouillon cubes dissolved in ¼ cup water)
- 1 ½ tsp. curry
- 1 ½ tsp. dill weed
- 1 tsp. minced garlic
- ¾ tsp. Old Bay Seasonings
- ¼ tsp. red pepper
Instructions:
Melt butter. Saute green onions and fresh tomatoes until soft. Stir in flour and blend well. Add milk to make a medium roux. Add dry ingredients and chicken base and sugar. Stir well and add shrimp and cook until shrimp are firm and pink. At this point, it is optional to add parsley. Serve over rice.
