Artichoke Dip

Ingredients:
  • 2 (14 oz.) can artichoke hearts (in brine, NOT marinade)
  • 3 large cloves garlic
  • 12 cup mayonnaise
  • 1 12 cup cream cheese (soft)
  • Juice of one large lemon
  • 1 cup grated Parmesan cheese
  • 1 cup Italian breadcrumbs

Instructions:

Preheat oven to 375 degrees. Combine finely chopped artichoke hearts and minced or pressed garlic. In a separate bowl, mix the mayonnaise, cream cheese, lemon juice and 1/2 cup of the grated cheese. Combine the mayonnaise-cheese and the artichoke-garlic mixtures and put in an oven-proof serving dish. Top with the remaining 1/2 cup grated cheese and the breadcrumbs. Bake at 375 degrees for 1/2 hour until lightly browned and bubbly. Serve with crackers, bread sticks or vegetables.
