Baked Bananas

Ingredients:
  • 6 to 8 bananas
  • 12 cup lemon juice
  • 1 Tbsp. butter
  • 1 cup sugar

Instructions:
Peel and cut the bananas into lengthwise pieces. Put the halves in a buttered shallow baking dish. Set aside. Cook the lemon juice, butter and sugar until it is a fairly light syrup. When done, pour the syrup over the bananas and bake in a 350 degree oven until the fruit is tender (about 30 minutes or more). If done slowly, both bananas and syrup should be a delicate rosy shade.

Notes:
I went to a cooking school in Augusta, Ga. when John was stationed there in the army. The teacher's name was Amelia and one of the first people I had met who shared my name. This was one of the recipes I learned to make there and one of our family's favorites when the children were young.
