Blender Gazpacho
Ingredients:
- 4 large ripe tomatoes, peeled and chopped
- ½ cucumber
- ¼ green pepper, chopped
- ¼ cup onion, chopped
- 2 tbsp. olive oil
- 1 cup tomato juice
- Dash Tabasco
- 1 tsp. salt
- ¼ tsp. pepper
- ½ tsp. lemon juice
Instructions: Blend everything well in a blender or food processor. Chill several hours. Serve cold. This can be garnished with chopped cucumbers, tomatoes, onions or croutons. This is especially good with good fresh summer tomatoes.
