Broccoli Soup

Ingredients:
  • 12 cup onions
  • 2 tbsp. butter
  • 12 to 1 head of broccoli
  • 5 cups chicken broth
  • 12 cup half and half
  • 2 egg yolks
  • nutmeg
  • salt
  • pepper
  • 2 to 4 tbsp. butter

Instructions:

 Saute the onions in the butter and add to the broccoli and the chicken broth.  Season with the salt, pepper and nutmeg and cook 20 minutes.  Process the soup in the food processor and add slowly to the milk and egg mixture and then put back on the heat and bring to a simmer. Season with additional butter and check for seasonings.  I sometimes add tobasco.  Good served hot or cold with a dollop of sour cream on top.
