Buttermilk Pancakes
- 1 1⁄4 c. sifted all-purpose flour
- 2 tsp. baking powder
- 1⁄2 tsp. baking soda
- 1 T. sugar
- 1⁄2 tsp. salt
- 1 beaten egg
- 1 c. buttermilk
- 2 T. vegetable or canola oil
Instructions: Sift together dry ingredients. Combine egg, milk, and oil: add to dry ingredients, stirring just till moistened. Bake on hot griddle. Makes about 8 pancakes.
Notes:
If you do not have buttermilk, use regular milk and leave out the soda and increase the baking powder to 3 tsps. John made pancakes for our children every Thursday and Saturday mornings while they were growing up. He even cut them up for them until they were in college.
