Buttermilk Pancakes

Ingredients:
  • 1 14 c. sifted all-purpose flour
  • 2 tsp. baking powder
  • 12 tsp. baking soda
  • 1 T. sugar
  • 12 tsp. salt
  • 1 beaten egg
  • 1 c. buttermilk
  • 2 T. vegetable or canola oil

Instructions:

 Sift together dry ingredients. Combine egg, milk, and oil: add to dry ingredients, stirring just till moistened. Bake on hot griddle. Makes about 8 pancakes. 

Notes:
If you do not have buttermilk, use regular milk and leave out the soda and increase the baking powder to 3 tsps. John made pancakes for our children every Thursday and Saturday mornings while they were growing up. He even cut them up for them until they were in college.
