Confetti Corn Salad
Ingredients:
- 2 cup corn kernels (canned) drained
- 3⁄4 cup water
- 1 (15 oz.) can black beans, rinsed and drained
- 1⁄2 cup sliced green onions
- 1⁄2 cup chopped red bell pepper
- 1 small cucumber, seeded and chopped
- 2 cloves garlic, minced
- 1⁄4 cup chopped fresh cilantro
- 1 tsp. sweet red pepper flakes
- 1⁄4 tsp. ground ginger
- 1⁄4 tsp. salt
- 1 Tbsp. canola oil
- 2 Tbsp. cider vinegar
- 1 Tbsp. lime juice
Instructions:
Combine first seven ingredients and set aside. Combine the remaining ingredients and whisk until blended. Pour over corn mixture. Cover and chill at least 2 hours.
