Crab Mornay
- 1⁄2 cup butter or margarine
- 1 small bunch green onions, chopped
- 1⁄2 cup parsley, finely chopped
- 2 1⁄2 Tbsp. flour
- 2 oz. Parmesan cheese
- 1 pt half and half
- 1⁄2 lb. Swiss cheese
- 1 Tbsp. sherry
- 1 lb. crabmeat
- salt to taste
- red pepper to taste
Instructions: In a heavy bottomed 2 quart saucepan, over low heat, melt butter. Saute onions and parsley just until soft. Blend in flour, half and half and cheese. When cheese has melted, add sherry, salt and red pepper. fold in crabmeat. Serve in chafing dish with crackers.

My bridge club found this recipe and we used it for two pre-wedding parties in the course of two weeks at my house. We thought it was very good.
