Date Bars
- 1 1⁄2 c. flour
- 1 c. brown sugar
- 1⁄2 tsp. soda
- 1⁄2 tsp. salt
- 1 1⁄2 c. (1 minute) oatmeal, uncooked
- 1 c. chopped pecans
- 1 c. melted margarine or butter
- 1 c. hot water
- 1 c. granulated sugar
- 1 tsp. vanilla
- 1 (8-oz.) pkg. chopped dates
Instructions: Mix together the first seven ingredients. Cover bottom of greased and floured (9 x 9) baking pan using only on-half of the mixture. Make date filling of hot water, granulated sugar, vanilla and dates. Mix and cook until thick enough to spread. Spread date filling over crumb mixture. Sprinkle remaining one-half crumb mixture over date filling. Bake for 30 minutes at 300 degrees. Let cool to room temperature, then cook in refrigerator. Cut into squares.
Notes:
Cooking the date filling takes about 10 to 15 minutes. You may have to bake just a little longer depending on how brown you want them.
