Fresh Fruit Salad
- ½ cup sugar
- 2 Tbsp. corn starch
- juice of 1 lemon and rind*
- juice of 1 orange and rind*
- ¾ cup pineapple juice
- ¼ cup water
- salt
Instructions: *I substitute about a tbsp. of frozen orange juice and a tbsp. lemon juice concentrate. I also start with a drained can of pineapple using the juice and water to make one cup. Cook all the above ingredients over medium heat until transparent. Cool until warm and pour over fruit. Blueberries, cantaloupe, peaches, pineapple, grapes, apples and add bananas at the time you are ready to serve as they will turn dark.
