Fresh Tomato Dressing
- 1 c. olive oil
- 1⁄2 c. balsalmic vinegar
- 3 cloves garlic, crushed and minced
- 1 T. sugar
- 1 T. salt
- 1 T. pepper
- 4 lg. tomatoes, peeled and chopped
- 2 T. fresh thyme or basil
Instructions: Whisk together first 6 ingredients in a large glass bowl. Stir in chopped tomatoes and thyme or basil. Cover and let stand at room temperature 1 hour, stirring occasionally. Cover and chill 8 hours.
Notes:
Dressing may be stored in the refrigerator up to 1 month. Stir additional chopped fresh tomato into dressing after each use.
