Fruit Cake Cookies

Ingredients:
  • 1 jar (small) pineapple preserves (9 oz.)
  • 2 sticks butter
  • 12 lb. dark brown sugar (1 12 cups packed)
  • 2 eggs
  • 1 12 T. milk
  • 2 12 c. self-rising flour
  • 12 tsp. soda
  • 12 tsp. vanilla
  • 6 slices candied pineapple (34 lbs.)
  • 12 lb. chopped dates or (half dates and half raisins)
  • 4 c. nuts

Instructions:

 Mix the sugar and butter and the pinapple preserves together until creamy. Add the eggs and milk. Combine the flour and soda and mix with wet ingredients. Add teh vanilla. Chop all the fruits and fold this into the cookie batter. Drop by small teaspoons on a greased cookie sheet. Bake at 300 degrees for 25 minutes.

Notes:
You can bake the cookies on wax paper instead of greasing the cookie sheet. I was unable to find pineapple preserves and used apricot instead and that worked great.
