Ginger Pennies
- 1 1⁄2 c. all-purpose flour
- 3⁄4 tsp. ginger
- 3⁄4 tsp. cinnamon
- 1⁄2 tsp. cloves
- 1⁄2 tsp. baking soda
- 1⁄4 tsp. salt
- 1 c. light brown sugar
- 1 large egg
- 1⁄4 c. molasses
- 1 1⁄2 stick butter
Instructions: Sift dry ingredients together. Cream brown sugar, egg, molasses and butter. On low speed, blend flour mixture into butter mixture. Spoon batter into Ziploc bag. Cut off a bit of the corner and squeeze tiny, dime-sized mounds onto a greased cookie sheet. Bake 4 to 5 minutes at 325 degrees. They will spread out to thin 1 inch round cookies. They come loose from the cookie sheet easily after they are cooled.
Notes:
These are very crisp and may need to cook a little longer depending on your oven. The taste is very similar to Moravian spice cookies. My friend Diane Viser says that the taste is strong and when you eat one you feel like you have had something and therefore hopefully feel satisfied without eating as many. Maybe we should just consider this a diet food!
