Green Beans Provencal
- 1 lb. green beans
- 4 slices bacon
- ½ cup chopped onion
- ½ cup chopped celery (optional)
- 2 tomatoes, peeled, cut in wedges
- 1 tsp. salt
- ½ tsp. dried, whole oregano
- 1/8 tsp. pepper
Instructions:
Wash beans. Remove strings. Cut into 1 ½ inch pieces. Set aside. Cook bacon in large skillet until crisp. Remove bacon, reserving two tbsp. drippings in skillet. Crumble bacon and set aside. Saute onion and celery in drippings until tender. Add green beans, tomatoes, salt, oregano and pepper. Cover and cook over medium heat 15 to 20 minutes. Sprinkle with crumbled bacon and serve.
