Ground Beef Vegetable Soup

Ingredients:
  • 1 ½ lbs. ground beef
  • 2 onions, chopped
  • 3 potatoes, diced
  • 2 carrots, sliced
  • 1 ½ cups okra, cut up
  • 1 small can shoe-peg corn, drained or fresh frozen corn
  • 23 cup frozen butterbeans
  • 2 medium cans tomatoes, cut up
  • 1 can tomato soup
  • 1 ½ cans water (more if needed)
  • salt
  • pepper
  • garlic salt
  • ½ tsp. chili powder
  • ¼ tsp. oregano

Instructions:

Brown meat. Add the tomatoes, soup, water, onions, seasonings and butterbeans and cook around 20 minutes, giving the butterbeans time to start cooking. Add all the other vegetables and cook about an hour until everything is done.

I use this recipe as a starting place to make vegetable soup. Sometimes I boil a ham bone and us the ham scraps as the meat in place of the hamburger. Also, left over roast is good to substitute and so is chicken and chicken stock for the water. Just use your imagination and any vegetables that suit your fancy. For example, string beans, peas, squash, zucchini etc.
