Jellied Apple Cider Salad

Ingredients:
  • 1 pkg. lemon jello
  • 2 cups hot apple cider
  • 1 tsp. unflavored jello
  • ¾ cup celery
  • 2 large red-skinned apples
  • ¼ tsp. salt
  • 1 ½ tsp. lemon juice

Instructions:

Dissolve the unflavored gelatin in 1 tablespoon of cider and set aside. Dissolve the lemon jello in 2 cups of hot cider, stir in the gelatin and chill until slightly thickened. Fold in celery and apples that have been grated on the coarse side of a grater. Pour into a quart mold and chill until ready to serve.
