Lemon Almond Wafers
- 1 c. butter or margarine
- 1 c. sugar
- 1 Large egg
- 1 tsp. vanilla extract
- 2 c. all-purpose flour
- 1 1⁄2 T. freshly grated lemon peel
Instructions: Heat oven to 350 degrees. Beat butter and sugar until fluffy. Beat in the egg, then vanilla. Gradually stir in flour until blended; stir in lemon peel. Drop by heaping half-tsp. on ungreased baking sheet. Press a few sliced almonds into the center of each cookie. Bake 8 to 10 minutes until the edges are golden brown. Let cool 1 to 2 minutes.
