Lemon Garlic Chicken
- 1 stick margarine or butter, melted
- 1 small clove garlic, crushed
- ¾ cup dry bread crumbs
- ½ cup parmesan cheese
- 1 ½ tbsp. minced fresh parsley
- 1 tsp. salt
- pepper to taste
- 6 boneless, skinless chicken breast halves
- juice of one lemon
- paprika
Instructions: Combine butter and garlic; set aside. Combine bread crumbs, cheese, parsley, salt and pepper; stir to blend. Dip each chicken breast in butter mixture and coat with breadcrumb mixture. Roll tightly, starting at narrow end, and secure with tooth pick. Arrange rolls in a shallow baking dish, drizzle with the remaining butter mixed with the lemon juice. Sprinkle with paprika. Bake a 325 for 50 minutes. I cut back on the salt. You can put these together ahead of time and refrigerate until ready to bake.
