Lemon Meringue Pie

Ingredients:
  • 3 eggs, separated
  • 1 ¼ cup sugar
  • 1 cup milk
  • juice of 2 large lemons
  • ½ stick margarine
  • 3 heaping tbsp. corn starch

Instructions:
Beat yolks, add milk, sugar and juice. Melt margarine and add the corn starch. Pour in egg mixture and cook until thick. Put in a baked pie shell and make meringue with the whites adding a couple tsp. sugar. Bake in 400 degree oven until nicely browned.
