Lentil Soup

Ingredients:
  • 1 ham bone
  • 4 carrots, sliced
  • 3 to 4 stalks celery, sliced
  • 1 onion, diced
  • 1 bag dry lentils
  • 1 can diced tomatoes with basil, onion and garlic
  • 14 tsp. tumeric (optional)

Instructions:

Remove all the meat from the ham bone; dice and set aside.  boil the ham bone in enough water to cover for an hour or two to make a good stock.  You need at least 8 cups.  Remove the fat from the stock and add all the other ingredients and cook for about 45 minutes.  Salt and pepper to taste.  Add the reserved ham pieces and bring to the boiling point.  Serve and enjoy. 

Notes:
When ready to serve you can add two tsp. apple cider vinegar.
