Mandarin Orange and Romaine Toss
- 1⁄4 cup vegetable oil
- 2 Tbsp. sugar
- 2 Tbsp. vinegar
- 1 Tbsp. chopped fresh parsley
- 1⁄2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. Tabasco sauce
- 1⁄4 cup sliced almonds
- 4 tsp. sugar
- 1⁄4 head iceberg lettuce
- 1 head romaine lettuce
- 2 stalks celery, chopped
- 2 green onions, chopped
- 1 (10 oz.) can Mandarin oranges, drained
Instructions:
Combine the first seven ingredients in jar with a lid. Cover with the lid and shake to mix well. Chill in the refrigerator. Combine the almonds and 4 tsp. sugar in a skillet. Cook over low heat until the sugar dissolves and coats the almonds, stirring constantly. Let stand until cool and break apart. Combine the iceberg lettuce, romaine, celery and green onions in a large salad bowl and toss to mix well. Add the dressing and toss to mix well. Arrange the oranges over the top. Sprinkle with the sugared almonds.
Notes:
This serves 6 to 8 but the quantity can easily be adjusted. This is an old recipe and now you can buy sugared almonds in most grocery stores so this would eliminate one of the step.
