Marinated Carrots

Ingredients:
  • 2 lbs. carrots, (whole baby carrots or sliced carrots)
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 stalks celery, chopped
  • 1 can tomato soup
  • 1 cup sugar
  • 12 cup oil
  • 34 cup vinegar
  • 1 tsp. dry mustard
  • 1 tsp. Worcestershire sauce
  • salt and pepper

Instructions:
Cook the carrots in boiling salted water about 5 minutes; cool. Mix the carrots, onion, green pepper and celery. Mix together the remaining ingredients and heat until the sugar is dissolved. Pour over the vegetables and marinate at least 8 hours.
