Oatmeal Cowboy Cookies
- 1 c. sugar
- 1 c. brown sugar
- 1 c. margarine or butter
- 2 eggs
- 2 c. sifted all-purpose flour
- 1⁄2 tsp. baking powder
- 1 tsp. soda
- 1⁄2 tsp. salt
- 2 c. oatmeal
- 1 T. vanilla
- 3⁄4 c. chopped pecans
- 1 (6-oz.) pkg. chocolate chips
Instructions: Cream the sugars and margarine; add eggs. Sift together the flour, baking powder, soda and salt. Blend into creamed mixture; add vanilla. Add oatmeal, chocolate chips and nuts. Drop by teaspoons on a greased cookie sheet. Bake at 325 degrees for 12 to 15 minutes.
Notes:
You can add 1/2 cup of unsweetened coconut in for variety if you like. Also, the dough will keep up to 3 days in the refrigerator before baking.
