Orange Blossoms
- 1 stick butter or margarine
- 1 c. sugar
- 4 eggs
- 2 c. self-rising flour
- 1⁄2 tsp. vanilla or orange extract
- 2 oranges
- 2 lemons or 1 T. frozen lemon juice
- 1 1⁄2 lbs 10 X sugar
Instructions: Combine the butter and sugar and beat until smooth; add the eggs, one at a time. Fold in the flour; add the vanilla. Bake in greased miniature muffin tins 10 to 12 minutes in a 350 degree oven. For the glaze: Mix together the juice and grated rind from the oranges and lemons. Add the 10 X sugar and mix thoroughly. Dip the cakes completely in this glaze as soon as they come out of the oven. Let dry and harden on wire racks for about an hour.
