Peanut Brittle
- 1 1⁄2 c. sugar
- 1⁄2 c. light corn syrup
- 1⁄3 c. water
- 2 c. shelled raw peanuts
- 3 tsp. baking soda
Instructions: Combine sugar, corn syrup and water in a large boiler and bring to a boil. Add peanuts and continue to boil until 300 degrees (syrup when droped from a spoon makes a fine, threadlike stream which breaks like a dry brittle twig). Remove from heat and add soda; blend, do not beat, until soda is absorbed into the syrup. Pour onto a large metal tray or cookie sheet which has been greased with vegetable oil. After about 10 minutes begin lifting around edges until you are able to lift it entirely free of the tray. Break into pieces.
