Persimmons Pudding

Ingredients:
  • 2 cups persimmon pulp
  • 3 eggs
  • 1 ¾ cups milk
  • 2 cups plain flour
  • ½ tsp. soda
  • ½ tsp. baking powder
  • 1 tsp. salt
  • ½ tsp. cinnamon
  • ½ tsp. nutmeg
  • 1 ½ cups sugar
  • ½ stick margarine

Instructions:
Sift all dry ingredients and set aside. Blend persimmon pulp, eggs and milk. Mix well. Gradually add dry ingredients to persimmon mixture. Melt butter in 9 X 13 pan. Add melted butter to mixture and blend well. Pour in baking dish. Bake 1 hour at 325 degrees. Pudding falls sightly as it cools.
