Potato Kale Soup
- 1 lb. sausage
- 1 bunch kale, coarsely chopped
- 1 small onion, chopped
- 1 to 2 Tbsp. olive oil
- 1 clove garlic, minced
- 3 cups chicken or vegetable broth
- 1 lb. potatoes
- 1 cup cream
- salt and pepper to taste
Instructions:
Cook the sausage and drain; set aside. Saute' the kale in olive oil and garlic with onion. Add broth and potatoes and simmer until potatoes are done. Mash lightly and add the crumbled sausage. Add the cream and salt and pepper and heat just to the boiling point.
Notes:
This is one of the grandchildren's favorite soups. Ginger started getting kale from the farmer's market and had to come up with a way to use it. Kale is a mild green and delicious this way. If the cream is a little heavy for you, just substitute with milk.
