Shortbread

Ingredients:
  • 2 sticks butter
  • 2 cups flour
  • ¾ cup corn starch
  • ½ cup sugar

Instructions:

Mix in food processor and press in a 9 x 9 pan. Prick thoroughly with a fork. Bake at 325 degrees for 1 hour and then 350 degrees for 10 minutes. Sprinkle with sugar and cut into fingers immediately.

All ovens differ so you may have to adjust according to the temperature of your oven, just be careful not to overcook..

Notes:
Triple the recipe and put in a 13 x 18 pan. Sometimes the cookies in the center of this big pan do not get crisp enough. It is fine after you separate the cookies to put the center cookies back in the oven to crisp. This is probably one of my signature recipes as I am always called upon to make these cookies.
