Stuffed Peppers
- 12 medium sized green peppers
- 3 lbs. ground beef
- 1 large chopped onion
- 3 cups cooked rice (1 cup uncooked)
- 1 ½ cups milk
- 4 eggs
- 15 oz. can tomato sauce
- 8 oz. pkg. sharp cheese
- 3 tbsp. brown sugar
- 1 tsp. dry mustard
- 1 tbsp. Worcestershire sauce
- salt and pepper
Instructions: Cut peppers in half lengthwise and remove stems and seeds. Drop halves in boiling salted water. Bring to a boil and simmer 3 minutes. Drain thoroughly and place in a shallow baking dish. Mix remaining ingredients. Fill peppers. Pour about ¼ inch of water into bottom of baking pan. Bake uncovered, in a 350 degree oven for 45 minutes. Good to freeze. Thaw some before baking. Before baking, you can spoon a tablespoon of homemade ketsup on the top.
