Tomato Ketchup

Ingredients:
  • 1 peck tomatoes, cored and quartered
  • 1 quart vinegar
  • 3 T. salt
  • 1 T. black pepper
  • 1 T. whole pickling spice
  • 3 T. dry mustard
  • 1 lb. sugar

Instructions:

Boil the quartered tomatoes and vinegar together for about an hour. Remove from heat and run through a food mill to remove the skin and seeds. Add all the spices and contine to cook for another hour. Add the sugar and cook until thick. After adding the sugar, stir often as it will stick.

Notes:
This recipe was my grandmother's (Mammy). It is very time consuming and yields so little for all the work and effort but it is so good on summer butterbeans, peas, etc. that Mama made it every summer. I have developed an easier version that starts with tomato sauce instead of fresh tomatoes (Tomato Ketchup II). We all like it as well.
