Tomato Ketchup II

Yields about 3 pints
Ingredients:
  • 2 (29 oz.) cans tomato sauce
  • 3 cups vinegar
  • 1 ½ tsp. salt
  • 1 tsp. black pepper
  • 1 T. dry mustard
  • ¼ tsp. allspice
  • 1/8 tsp. chili
  • 1/8 tsp. cinnamon
  • dash cloves
  • dash ginger
  • 2 cups sugar

Instructions:

Mix and boil all the ingredients except the sugar for an hour or more until mixture is reduced and beginning to thicken. Add the sugar and cook for another hour, stirring often to keep it from sticking. Yield about 3 pints.

Notes:
You can adjust the spices to suit your taste. this ketchup is a family tradition and one that the in-laws like as well. I am never without some homemade ketchup in the refrigerator.
