Tuna-Carrot Salad
- 5 to 6 medium carrots, shredded or finely chopped
- 1⁄2 cup diced celery
- 1 small onion, minced
- 2 (6 oz.) cans tuna, drained
- 2 cups shoe-string potatoes
- 3⁄4 cup mayonnaise
- 2 Tbsp. sugar
- 3 Tbsp. thousand island dressing
Instructions:
Combine the carrots, celery, onion, and tuna in a bowl. In another bowl mix together well the mayonnaise, sugar and thousand island dressing. When ready to serve, add the shoe-string potatoes to the tuna and stir in the dressing. This does not keep well so do not mix in advance.
Notes:
The food processor works well to prepare the vegetables. Also, I saw this recipe in an old cookbook and they substituted the thousand island dressing with French dressing.
