White Bean and Ham Soup

Ingredients:
  • 3 (15 oz.) cans white beans, drained
  • 1 (15 oz.) can chicken broth
  • 2 Tbsp. butter
  • 1 onion, diced
  • 14 tsp. pepper
  • 8 oz. cooked or canned ham

Instructions:
Puree' one can of beans with a little chicken broth. Saute' onion in butter and add ham. Add remaining ingredients and bring to a boil. Simmer at least 10 minutes.

Notes:
This recipe doubles (or triples) and freezes well.
